Harvested in October at their optimum moment when the olive turns colour from green into purple obtaining full aromas and bitterness.

The colour is green , the fruitiness reminds you almonds, artichoke and tomato with bitter tasting notes of medium to high intensity.

Ideal on top of focaccias, fish, tomatoes and legumes.
