Origin Alberobello in  Puglia, harvest 2023 /2024

Harvested in October before ripe period starts when the olives turn colours from green into purple like a red wine colour.

Its colour is green with herbaceous nuances from artichoke, almonds and tomato with bitterness tasting notes from medium to high intensity which makes it a delightful oil.

Ideally used on top of focaccias, legumes, fishes and bread with tomatoes.
